Kim's Oats-Raisins-Chocolate Cookies

Today I want to thank you my dear friend Kim for sharing this delicious recipe.
I’m not a big fan of raisins but these cookies have the perfect balance of flavor and an irresistible texture. She made this cookies using organic coconut palm sugar instead of brown sugar and I can assure they taste like HEAVEN!
Oats-Raisins-Chocolate cookies are the perfect treats for an afternoon snack during the fall season.

Ingredients

1/2 cup (1 stick) plus 6 tbsp. butter, softened
3/4 cup firmly packed Organic Coconut Palm Sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purposed flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups Old Fashioned Quaker Oats
3/4 cup raisins
3/4 cup semi-sweet chocolate chips

Directions

Preheat oven to 350F.
In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
Add eggs and vanilla, beat well.
Add combined flour, baking soda, cinnamon and salt; mix well.
Add oats, raisins and chocolate chips, mix well.
Drop dough by rounded tablespoonfuls onto ungresed cookie sheets.
Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
Makes about 4 dozen cookies.
